The Copper Onion

If you live in or near SLC you’ve most likely heard of The Copper Onion. It’s a delicious restaurant located on Broadway right next door to the Tower Theatre, used for many of the Sundance Film Festival screenings. It’s a popular spot any time they’re open, and I was lucky enough to snag a reservation for a work meeting last week. The menu boasts of a New American cuisine made from Utah farmstead ingredients. It’s fresh, delicious, and creative.

I’ve never really had a good helping of brussel sprouts, but we ordered some as hors d’oeuvres and they were delicious – chopped and sauteed with garlic and olive oil. My salad was pretty amazing too. The decor and set-up were welcoming and a little eclectic. (The pig has somehow become part of their branding.) I’d like to go back and try the dinner menu sometime soon. If you’re in downtown it’s definitely worth stopping in.
