I think we’ve officially found our favorite summer meal – mango, avocado veggie tacos. They’re simple, light, and absolutely delicious. We sauteed onion and yellow bell pepper, then added black beans, corn, cilantro, and diced tomato. We lightly cooked some corn tortillas in olive oil and used extra cilantro, avocado, sour cream, and mango for garnish. It was perfection. We’ve officially dubbed this the summer of the veggie taco.
